Homemade Breakfast Pizza
We have all had pizza for breakfast at some point in our lives, but have you ever tried a breakfast style pizza? Yes: eggs, bacon, cheese, and pizza. It’s ok to drool at the thought.
Wanna know the best part about this delicious idea? You can make this gourmet, Tuscan style pizza with ingredients you probably already have in your kitchen.
If you are looking to step outside of the box, mix breakfast with pizza, or simply to cure your hangover, this mouth-watering pizza is sure to cure any craving.
Ingredients:
- 1 cup peeled, canned, whole tomatoes
- Kosher salt
- 2 Tbsp olive oil (extra virgin)
- 1/4 pound of bacon or pancetta
- 4 personal sized (13-in) disc pizza dough (thawed)
- 1/2 pound of shredded mozzarella cheese
- 4 large, fresh, cage free eggs
- Handful of fresh basil leaves
Directions:
1.Preheat oven and pizza stone to 500 degrees 1 hour prior to cooking (for wood-fired pizza oven, pre-heat 4 hours prior to cooking).
2.Puree the tomatoes until a smooth, saucy consistency. Salt to taste.
3.Heat a skillet and fry bacon OR sauté pancetta with olive oil until crisp (5-7 min).
4.Using a ladle, evenly spread pureed tomatoes on each of the pizza dough discs, leaving 1-inch border for rising crust.
5.Sprinkle shredded mozzarella evenly over each of the sauced pizza dough discs.
6.Gently place the pizzas on the pizza stone and bake for approx. 4 minutes until golden and beginning to char.
7.Remove the pizzas from the oven, and break a fresh egg over the center of the pizza. Top with the cooked bacon or pancetta.
8.Return pizzas to oven and bake for an additional 3-4 minutes.
9.Remove pizzas from oven, top with fresh basil leaves, and serve immediately.
